Rosé harvest - Heppington

Rosé harvest

Yes it's been an exceptional growing season and we have started to gather in the crop. The fruit from the rows we have selected for our still wines has been thinned to discard the bunches that weren't going to ripen and to allow the vine to concentrate on those left behind. And here we have the Pinot Noir destined for our rosé. Meanwhile we are leaving the PN for our still red for a bit longer to allow the sugars (brix) to increase further and the acidity to reduce, all the while watching out for rot (botrytis). A delicate balance.
